• How do I control the knife without covering the meat?

  Use the control pad below the counter instead of touching the blade. Touch the pad to pick up the knife. Drag down to cut, up to release the shaving and sideways to adjust thickness. Lift your finger to return the knife to its rest. Holding still does not keep cutting.

• The knife will not move. What should I try?
